Jérôme Fourmentin is a recruitment specialist. His core target is the hospitality, tourism, and restaurant industries, particularly fast food. For 15 years, he has built an impressive portfolio. Today, he is a senior consultant for Aspen RH, a firm that operates in all support or operational functions, both in France and abroad. “The hospitality, restaurant, and tourism sectors are among the largest private recruiters in the French economy. They employ several million employees,” explains Jérôme Fourmentin. The firm handles all types of recruitment, whether for themed restaurants, caterers, or collective catering, and of course, major national brands, whether integrated or franchised networks, or directly with multi-franchisees. And all types of networks, from small ones with about ten units to leaders in fast food with around 500 units. Dining room, kitchen, all professions are under tension. “We need to rethink the entire recruitment policy. In 15 years, we’ve gone from paper recruitment to the web, organizing professional fairs, then professional social networks, and now AI! The employer brand has also developed strongly… One social network is preferred for sourcing… LinkedIn has exceeded one billion connected people,” notes the recruiter. And because speed is necessary to alleviate market tension, AI is now an ally. “We are in the early stages. AI helps us source CVs, search for potential candidates in databases. We need to move quickly because a manager receives several proposals per week,” he continues. Also, most interviews are conducted via video. “HR departments have a real interest in working with us because it takes time to approach and evaluate a manager in place. (We provide them with more than just a CV, a precise summary, an evaluation of the candidate’s savoir-vivre and savoir-être, and of course, validation of skills and references),” summarizes the headhunter. It goes without saying that he is also a networker. Codir, purchasing function, marketing, but also chef, no function is beyond him.
